This delicious, creamy pasta casserole tastes cheesy, although it is whole food, plant-based. The spices provide a taste sensation for the palate and the creamy glaze gives it a wonderful consistency!
The casserole only takes 25 minutes to prepare. It then bakes in the oven, releasing its wonderful aroma. Thanks to a large selection of vegetables, the pasta casserole contains lots of different vitamins, trace elements and fiber and is completely cholesterol-free. This dish is also full of protein thanks to the soy noodles. In other words: it not only tastes delicious, but is also really healthy!

Below you can find a video instruction this recipe. However, instead of soy noodles, we have used red lentil pasta in the video. To save time, we have replaced the fresh vegetables with 500 grams of frozen mixed vegetables.

The quantity is calculated for 4 portions. The preparation time is 25 minutes and the baking time 35 – 40 minutes. We hope you enjoy cooking and having fun!
Casserole glaze
- 750 ml soy milk
- 2 tbsp cashew butter
Add to a bowl and whisk until the butter has dissolved.
- 2 tbsp nutritional yeast flakes
- 1 tbsp basil
- 1 tsp salt
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp sweet paprika powder
- ½ tsp ground mustard seed
- ½ tsp ground black pepper
- ½ tsp ground turmeric
Add everything to the soy milk and stir well.
- 300 g whole-grain noodles
Place in a casserole dish and mix with half of the glaze.
- 230 g corn kernels, cooked (1 jar/can, drained weight)
- 200 g broccoli, wash and divide into florets
- 140 g cherry tomatoes, cut in half
- 100 g mushrooms, cut into small pieces
- 1 red bell pepper, wash and dice
- 1 zucchini, wash and dice
- 2 garlic cloves, crushed
- 1 onion, cut into small pieces
Spread everything on top of the pasta in the gratin dish. Pour the rest of the glaze over it. Bake in the middle of the preheated oven for 40 minutes at 200 degrees Celsius (400 degrees Fahrenheit) top and bottom heat.
