Dr. Jeffrey Keller, PhD

 …but you may call him Jeff. He is our researcher and statistician. After his presentations on the benefits of a whole food plant-based diet, there were many interested follow-up questions, which ultimately led us to write our first cookbook.

From one day to the next, he switched to a whole food plant-based diet. After four months he got rid of his lifelong hay fever! The newly gained quality of life is invaluable to him!

Our lives changed at the beginning of 2018.

Kevin read a book about the so-called lifestyle medicine, the effect of food on health. Among other things, it said that many allergies could be stopped with the right diet. He changed his diet from one day to the next with wanting to get rid of his hay fever.

In his loving yet commanding manner, he forced the rest of the family to go along with the change. From a flexitarian diet with animal products and little meat and fish to a wholefood plant-based one. Jeff had recently changed his diet himself and was delighted to have a new “accomplice” in the family.

The rest of us? To be honest, we only agreed because we thought this phase would soon be over. Before long they would realize this diet didn’t give them enough energy and that it was far too much effort to eat this way. We had every prejudice a person could have.

And what happened? After a few weeks, we felt so good that there was no way we were going to switch back! We all lost weight, even though we ate as much as we wanted. Our wellbeing improved, our digestion got better (no more constipation and heart burn!), and we had much more energy! Over time we got thicker hair, stronger nails and clearer skin.

We did further research on this topic and found that there have already been countless scientific studies proving that chronic diseases can be prevented, stopped or even reversed with a healthy diet!

Cardiovascular diseases, high blood pressure and cholesterol levels, type 2 diabetes, obesity and other diseases are not an inevitable part of ageing. They are merely “normal diseases” of a Western lifestyle. Therefore, we knew that the positive changes we felt were no coincidence. It encouraged us to keep going.

Nevertheless, the transition was not entirely smooth. We spent a lot of time inventing new recipes because there were no templates for our diet. How can you quickly cook everyday dishes? How do you sweeten desserts without refined sugar and syrups? What are the healthiest foods and how do we meet our nutritional requirements?

We had to work hard to find the answers to these questions. But how could people do it who don’t like trying new dishes? Who don’t have a clinical scientist with a PhD at home to read, review and summarize the studies?

That’s why we wrote our first cookbook. It contains the best recipes from breakfast to main meals and desserts. It is also full of tips and tricks for everyday life and precise nutritional information. Anyone interested can start eating a wholefood plant-based diet straight away – no cooking experience necessary!
